- Skin-less, boneless chicken breasts
- Canned no-salt added green beans (french style or regular cut)
- No-salt added potatoes
- Lemon juice
- Mrs. Dash salt-free seasoning (flavor is based on your preference)
Pre-heat your oven to 375 degrees. Spray your pan with some I can’t believe it’s not butter spray, and place the chicken breasts in the middle going across. Drain and rinse your green beans and pour them onto one side of the dish. I couldn’t find canned whole potatoes with no salt in our local grocery store so I settled for some microwave bags of no-salt potatoes that I found in the same area as the other potatoes in the veggie aisle. I placed them in the microwave for 8 minutes per the directions on the bag and then carefully removed them from the microwave and cut the bag open, LOTS of steam came out so definitely be prepared for that if you use those. I cut the potatoes in chunks and placed on the opposite side of the dish. If you find canned whole potatoes with no salt added, just drain and rinse them before placing them in the dish. Sprinkle lemon juice over the entire dish followed by a sprinkle of Mrs. Dash salt free seasoning over the entire dish. Cover the dish with aluminum foil and cook for 1 hour, checking about half way through.
When you remove from the oven, carefully remove the foil and serve right away or store in containers for a later time. For the most part, this is an effortless dish and you have a complete meal in just one pan. Enjoy!
